Fears of hiring my first employee

So, this is my first post here I have lurked around and read a bit but I have a bit of a predicament.

So a little background, My wife and I live in the Southeast U.S. I am 22 and my wife is 23. I work at a Fortune 500 company in account management as my full time job, my wife and I own a media business filming/photographing weddings. My wife edits full time during the week, while I film/photograph with her on weekends. We founded this year in February and are on track to make around $65,000 gross by EOY. Side note, I had no idea how high business taxes were until I met with my CPA and saw the outrageous number, my initial thought was "He is kidding".

So anyway, back to my topic. I am physically killing myself with the additional work and have not had an off weekend in 6 months. I am wanting to hire an additional employee to take my place in filming/photographing (depending on the event) to work with my wife at weddings on the weekends. I have run into a dilemma, our business was built on the ability to produce quality, reputable work with a distinct style. I can't seem to throw that responsibility and trust onto someone even if they are "qualified". How have you as business owners taken that leap of faith to entrust someone to do the work of your business, even after training them? Even thinking about this makes me shiver at the possibilities of failure that could ensue because I am not there to be in control.
